What a waste of blueberries

Mmm... fresh blueberries (well, fresh-ish. I got them from Walmart. I don't know where to buy fresh produce around here, but I'm sure there's somewhere).



I decided to make blueberry muffins. I don't actually like blueberries, but K-Swiss does.

So. Blueberry muffins.

Using some quick mix and add in a handful of chopped blueberries.



And....


Voila!!!


Wait a minute.... Somethings not right here. Why are they so heavy....

The texture is all funky and they're not yummy at all....


They.... they didn't rise!

Why didn't they rise? :-(





Oh. Right. Baking powder.




I mix my own baking powder* and I wanted it to be fresh (did you know baking powder can go off?). I don't know how long it would take for my homemade baking powder to go off, so I thought I'd wait until I actually used the quick mix to add in the baking powder. Turns out I forgot.

So, I made some blueberry muffins from a mix I had lying around. Because I had promised the boys blueberry muffins. (no photos of those. They were eaten quickly!)

But, after this all happened, I went back, added the baking powder and made some garlic-cheese biscuits* and, happily, these ones turn out okay. Yum!

Baking powder: Since I had everything on hand anyway, I made my own. 1 part baking soda and 2 parts cream of tarter. Toss in 1 part corn starch if you're not going to use it immediately to wick away moisture. Or else it will activate and go off before you have a chance to use it. After this fiasco, I just made some and I'll keep it on hand for a while. I don't think it'll go off too quickly.

Garlic-cheese biscuits: To the Quick-Mix biscuit recipe, add 3/4 cup grated cheese of your choice and one pressed garlic clove, or even two, or use a teaspoon of garlic powder. Add in an extra cup of milk if you want to make drop biscuits instead of rolling them out. I'm lazy. I use the milk!
